
Back with another easy cocktail that tastes oh so delicious as the weather warms up here in Arizona! So I’m not a huge fan of ginger & not a huge fan of mojitos but somehow I love a Moscow mule… with tequila aka Mexican Mule. I like to add a little heat to my cocktails so I am spicing it up with this version! Like most cocktails, if you don’t want it spicy then skip the jalapeños. Picked up a new tequila from Trader Joe’s called Espolon and really liked it! I got the Blanco which is usually the best for mixing in cocktails and it’s a bit lighter than the reposado. It was fairly priced too, I believe around $20!

Ingredients:
- Blanco Tequila
- Ginger beer
- Pineapple juice
- 3 limes
- 2-3 jalapeño slices
- Mint (lots of it!)
Instructions:
In a shaker, muddle 2-3 slices of jalapeño (with the seeds for spice) & 4 mint leaves. The mint amount is kinda up to you so add more if you want it more monty. Pour in 2 shots of tequila, the juice of 3 limes and one shot of pineapple juice (key ingredient), a couple ice cubes and shake! Pour shaker mixture into copper cups filled with LOTS of ice! This recipe will make two cocktails, so the mixture should fill up about halfway in each cup filled with ice. Fill the remainder of the cups with ginger beer, stir and top with a mint sprig & jalapeño slice for show!
